Healthful Thanksgiving Inspired Meal

If you are like me, you've been having trouble staying motivated with healthy eats during the holiday season. With all the extra goodies around - both sweet and salty - it's been hard for me to stay on track. I found the perfect post Thanksgiving meal that is both cheap and healthy while still satisfying those Turkey-Day leftovers that you crave. I give you Turkey Quinoa Meatloaf with a side of Spaghetti Squash!

To start, I picked up a local Spaghetti Squash at the Brooklyn Farmers market for $1! I halved the squash lengthwise, and placed it down in a pool of water, about a half inch deep, and roasted it in the oven for 45 minutes at 350F. After scooping out the seeds, I used a fork to scrape the spaghetti-like strands out of the squash and sauteed it in some olive oil with a touch of salt, pepper and oregano. This side dish lasted Stephen and I Monday - Thursday, that's like $0.12 per serving!

For our main dish, I used a great Turkey Quinoa Meatloaf recipe from All - it's lean, filling and tasty. This meal is a great hearty meal to last you all week, and it'll keep you warm and cozy on those brisk fall nights after your workout!
