I wanted to share my workout calendar with you for an example on how you can track your progress on a daily basis - I think the format would work great too for keeping track of my meals. It's very basic, but as usual, I work best when I stick to a routine and keep a written log - and doesn't it feel good to make a check mark of completion next to something? :-) It's a simple format you can find in your basic office software on your computer.

Alternatively, if you are a member of Equinox, their online software has a much sexier version of my calendar where it tracks how many times you've checked in a week, what classes you took, and you can even mark what type of workouts you did (cardio, strength, flexibility, etc.) I usually only use their interface to book my spin bike, but it's always a relief to see if I meet or exceed my personally set check-in quota.
